Small-batch donut lab · Fried at 5am

Light enough to float.

Brioche dough proofed for eighteen hours, so it tears soft and airy. Never dry, never heavy.

Theory 01 · The glaze

Thin as glass. Never too sweet.

One coat, poured warm, set in seconds. You taste the fruit first and the sugar second.

Theory 02 · The finish

Sprinkles with a reason.

Freeze-dried strawberry, toasted coconut, real vanilla bean. Nothing waxy. Nothing there just for color.

Today's case · Gone by noon

The case

Four flavors. Fried this morning.

We make about four hundred donuts a day. When the case is empty, we turn off the fryer and start tomorrow's dough.

The method

Slow dough. Fast glaze.

Light dough takes time. Thin glaze has to happen fast. We do the first overnight and the second in front of you.

0HOURS

Proofed for eighteen hours

The dough rests overnight in the cold. That slow rise is where the air comes from.

00:00AM FRY

Fried at five, in small batches

A new batch every forty minutes in clean oil. Nothing sits in the case longer than three hours.

0.0MM OF GLAZE

Glazed to order

One thin coat, poured warm. Enough to shine, never enough to bury the dough.

The glaze lab

Pour one yourself.

Press and hold to glaze. Let go too early and it slides right back off. That's the theory.

Press and hold the button, or hold the space bar while it has focus.

FAQ

Questions from the line.

Still wondering? Come say hi

Do you really sell out?

Most days, yes. We fry about four hundred, and the case is usually empty before noon. Order ahead and your box is held until 1pm.

Are they too sweet?

We hear that worry a lot. The glaze is one thin coat with the fruit up front, so it tastes fresh, not sugary.

How fresh is fresh?

Every donut reaches you within three hours of the fryer. Anything left at closing goes to the shelter down the street.

Do you have vegan donuts?

Mango Sun can be made vegan on Fridays and Saturdays. Pick it in the box notes.

Can I order for the office or an event?

Yes. Use the catering builder for 24 donuts or more. It gives you a live price, and we confirm within the day.

How do points work?

Ten points per dollar, and a stamp per visit. Ten stamps is a free box of six.
